Pineapple Mojito Mocktail
On warm spring and summer days, there’s nothing better than a cool, refreshing drink to brighten up any afternoon or evening. Here’s a delicious mocktail that’s tangy, bright, and made with fresh pineapple. We love to top off the drink with our Fruit For Thought dried fruit as the ultimate garnish and post-drink snack.
Ingredients:
Pineapple Mint Puree:
- 3/4 cup sugar
- 1 cup water
- 1 cup fresh mint, firmly packed
- 1 1/2 cups canned pineapple chunks, drained or freshly cut pineapple
Pineapple Mojito Mocktail:
- ½ lime, juiced, and ½ lime cut into wedges as a garnish
- 2 pineapple chunks
- Handful of ice
- 2 ounces of the pineapple mint puree
- 4 ounces of club soda
- 4 mint leaves (more for garnish)
- 2 rings of Fruit For Thought Dried Pineapple
Directions:
Pineapple Mint Puree:
- Combine the water and sugar in a small saucepan. Bring to a boil and stir until the sugar dissolves. This should only take a couple minutes.
- Remove the saucepan from the heat and stir in the fresh mint. Let the syrup sit until it cools.
- While the syrup is cooling, place the pineapple chunks in a blender and puree until smooth.
- Remove the mint from the syrup and pour the cooled syrup into the blender and pulse a couple times to combine. Pour the pineapple puree into a jar and chill until ready to use.
Note: You can make this in advance and store it in the refrigerator for 3-4 days.
Pineapple Mojito Mocktail:
- Muddle the pineapple, lime, and mint in the bottom of a tall glass.
- Fill with ice and add the pineapple mint puree with the club soda. Stir to combine.
- Garnish with mint, a lime wedge, and dried pineapple rings.
