Blueberry Pineapple Overnight Oats Recipe

This blueberry pineapple overnight oats recipe, created by Sunkissed Palette, is perfect for meal prepping and traveling. Make these in the evening so you can grab one to-go the next morning for breakfast or for a mid-day snack! Overnight oats have a simple base recipe, so what really makes them stand out are the toppings and garnishes. We love topping them off with Fruit For Thought Pineapple.


Ingredients: 

  • 1/4 cup oats
  • 1/3 cup plant-based milk
  • 1 tsp vanilla 
  • 1 tablespoon maple syrup
  • 1/2 tsp cinnamon

Garnishes: 

  • Dried pineapple
  • Frozen blueberries 

Directions: 

  1. Add plant-based milk, vanilla, cinnamon, and maple syrup into a mason jar and stir to combine.
  2. Add the oats and stir a few more times. Make sure oats are fully combined with wet ingredients.
  3. Cover with a lid and set in the refrigerator overnight or a minimum of 6 hours.
  4. The following day, open, stir, and enjoy. Garnish with Fruit For Thought Dried Pineapple and frozen blueberries! 

Overnight oats will keep in the refrigerator for 2-3 days and are not freezer friendly.
